Coconut Cream Sauce Fish with Sweet Potato Mash




Ingredient:
- Coconut Full Cream Milk
- Fillet/ Chicken Steak
- Japanese Cucumber
- Cherry Tomatoes
- Sweet Potatoes
- Carrot
- Mushroom
- Butter
- Raisin

Prepare the Ingredient:
1. Dry fish / chicken steak with paper power and season with salt, black pepper, cornflour on both sides
2. Cut sweet potatoes and carrots into small pieces
3. Cut mushroom into small pieces
4. Slice cucumber

How to cook:
1. Bring water to boil, add in diced sweet potato and carrot, let it cook for 20 mins, drain away the water and mash with hand masher, add in butter, pepper, salt and some chopped onion, some coconut milk if there is excess.
2. Heat up non-stick wok, add in olive oil, pan fry fillet until golden brown
3. Heat up butter, add in chopped onion and garlic, pour in coconut milk and stir, add in some salt and black pepper for taste. Add in some raisins.
4. Pour the sauce over the fish fillet.
5. Use spoon to scoop the mash and make it into a ball besides the fish fillet.
