White and Black Fungus Soup with Snow Pear


Ingredient:
- Chicken bone
- White Fungus
- Black Fungus
- Snow Pear

* Note: White/ Black Fungus will expand significantly upon contact with water

How to cook:
1. Boil water, add in chicken bone
2. Soak Fungus, cut away hard part and add into soup after 15 mins
3. After 45 mins, add in sliced snow pear
4. Cook for another 15 to 20 mins
5. Add abit of salt or soya sauce

Lotus Leaf Wrapped Chicken with Pumpkin

Ingredient:
- Chicken Thigh
- Lotus Leaf
- Pumpkin
- Mushroom

Prepare the ingredient:
1. Marinate chicken with pepper, sugar, corn flour, salt, soya sauce, hua tiao wine, egg white for 10 mins
2. Cut mushroom and pumpkin into thin slices
3. On a piece of chicken thigh meat, add some sliced mushroom and sliced pumpkin, wrapped up the lotus leaf (greener side should face down)

How to cook:
4. Steamed for 20 mins

Steamed Sea Cucumber Pork Wrap


Ingredient:
- Mince Meat
- Water Chestnut
- Fried Red Onion
- Mushroom
- Sea Cucumber

Prepare the Ingredient:
1. Mixed minced meat with fine mushroom cubes, fried onion, salt, sugar, hua tiao wine, soya sauce, corn starch, pepper, smash mixture against bowl, marinate for 10 mins
2. Wipe mositure off sea cucumber then spread interior with corn starch, lay mixture over it, make it into a wrap

How to cook:
1. Steam sea cucumber wrap for 20 mins
2. When sea cucumber wrapped is ready, cut into smaller slices, add wolfberry on top
3. Add in some oil, add in flour and stir the mixture
4. Add in chicken stock, mushroom water, salt, soya sauce and continue stirring until mixture thicken, spread over sliced sea cucumber wrap

Pan-Fried Chicken Chop


Ingredient:
- Chicken Thigh
- Mirin
- Sakae
- Japanese Soya sauce

Prepare the ingredient:
1. Marinate chicken thigh by adding 1 bowl of mirin, 1 bowl of mirin, 1 bowl of jap soya sauce, sugar and some lime slice, marinate for 30 mins
2. Cut garlic into small cubes, pan fried till golden brown

How to cook:
1. Heat up oil, pan fried marinated chicken chop till golden brown
2. Heat up the marinated sauce, add in pan fried chopped garlic cubes and some butter to thicken the mixture
3. Pour gravy over pan fried chicken

Stir Fried Mushroom with Sliced Fish


Ingredient:
- Portobello Mushroom
- Shimeji Mushroom
- Fragrant Mushroom
- Abalone Mushroom
- Sliced Fish

How to cook:
1. Add chopped onion to stir fry, followed by garlic
2. Add in sliced fish followed by mushrooms to stir fry
3. Add in oyster sauce, pepper, soya sauce
4. Add some butter, finish off stir fry
5. Add some pink peppercorn

Stir Fried Turnip, Carrot and Cabbage



Ingredient:
- Carrot
- Cabbage
- turnip
- dried shrimplet
- red onion
- garlic


Prepare the ingredient:
1. Cut red onion and garlic into fine cubes
2. Cut cabbage, carrot and turnip into fine stripes

3. Soak dried shrimplet in water to soften them

How to cook:
1. Heat up oil, stir fry onion....followed by garlic
2. Add in shrimplet to continue to stir fry
3. Add in shredded carrot to stir fry, follow by cabbage and turnp

4. Add in some water, some pepper, soya sauce and oyster sauce and continue to stir fry
5. Leave it to stew for few mins

Lotus Roots Peanut Soup

Ingredient:
- Lotus Roots
- Peanut
- Pork Ribs

Prepare the ingredient:
1. Soak peanuts overnight

How to cook:
1. Boil water, add in pork ribs and peanut
2. Cook over medium flame for half hour, add in sliced lotus roots
3. Cook for another 1 hour, add 1 teaspoon of soya sauce as seasoning

Grilled Chicken Wings


Ingredient:
- Chicken wings
- Garlic

How to cook:

1. Marinate chicken wings (cut the tips) with garlic, soya sauce, dark soya sauce, shao xing wine, sugar for half hour, add in sesame oil only after that
2. Put in Toaster Oven to grill for 10 mins, flick over to grill again for another 10 mins

Ikan Bilis Tomato Soup

Ingredient:
- Ikan Bilis
- Tomatoes

How to cook:

1. Wash Ikan bilis, add oil, stir Fry ikan bilis till golden brown
2. Add in cut tomatoes to stir fry
3. Add them to boiling water together with tomatoes and cook for half hour, no seasoning required

Bringjal with Fragrant Onion


Ingredient:
- Bringjal
- Onions
- Spring onions

How to cook:

1. Cook sliced bringjal in boiling water, add vinegar
2. Cut bringjal into smaller slices
3. Stir fried sliced red onions until crispy brown
4. Using the remaining oil, heat up, add in soya sauce, bring to boil then pour over bringjal
5. Spread crispy onions on top on sliced bringjal, add spring onions

Ginkgo Nut and Water Chestnut Soup


Ingredient:
- Ginko Nut
- Pork Ribs/ Lean Meat
- Water Chestnut

- Honey Dates

How to cook:

- Boil water, add in lean meat/ pork ribs, honey dates
- Add in water chestnut and ginko nut, cook over medium flame for 1 hours
- Add 1 tsp of soya sauce as seasoning

Stir Fried Prawns with Chilli and Garlic


Ingredient:
- Big Prawn
- Chilli


How to cook:

1. Stir Fry Garlic
2. Add in Chopped Chilli/ Chilli Padi to stir Fry
3. Turn up the heat and add in Prawn to stir fry
4. Once prawns are cooked, add in oyster sauce and abit water
5. Add some fish sauce as seasoning

Meat Ball Soup with Cai Xin



Ingredient:
- Minced Pork
- Prawn
- Mushroom
- Water Chestnut
- Cai Xin

Prepare the ingredient:
1. Cut prawns, water chestnut and mushroom into very small cubes
2. Mix diced mushroom and prawn with minced pork, add in soya sauce, oyster sauce, seasame oil, pepper, sugar and corn flour
3. Roll into small meat balls

How to cook:
1. Boil water, add in chicken/ pork bone to cook for half hour
2. Turn up the heat for water to boil, add in meat ball
2. Add in 1 tsp of soya sauce
3. Add in Cai Xin when soup is almost ready

Fried Kunning Fish

Ingredient:
- Kunning Fish
- Curry Powder

How to cook:
1. Spread some salt on kunning fish
2. Spread some curry powder on top
3. Pan fried the fish when oil is hot

Pig Stomach Soup with Abalone Shoots

Ingredient:
- Pork Stomach
- Pork Ribs
- Mushroom
- Abalone shoots

How to cook:
1. Wash Pig Stomach thoroughly with salt
2. Fried in pan with no oil
3. Add Pork Ribs in boiling water
4. Add pepper, add in pork stomach to cook for 1 hour
5. Add in sliced mushrooms and abalone shoots

Stir Fried Red Pepper with Sea Cucumber

Ingredient:
- Sea Cucumber
- Red Pepper
- Roast Pork
- Tomatoes

How to cook:
1. Cut everything into small pieces
2. Stir fry garlic
3. Stir fry Sea Cucumber
4. Stir fry Red Pepper and Tomatoes
5. Let mixture stew for 5 mins to soften sea cucumber
6. Add in 1 tsp of soya sauce as seasoning

Steamed Fish with Toufu and Tomatoes

Ingredient:
- Toufu
- Fresh Fish
- Tomatoes
- Mushroom
- Chilli
- Wolfberry

Prepare the ingredient:
1. Marinate fish with soya sauce and seasame oil
2. Cut tomatoes into thin slices as base layer on plate
3. Put fish on top of tomatoes slices, add sliced toufu, mushrooms, chilli and wolfberry on top

How to cook:
1. Steam fish for 15 mins

Crispy Fried Chicken

Ingredient:
- Chicken
- Crispy Flour

How to cook:
1. Dip Chicken in crispy flour, fry when oil is hot

Fish Ball Soup with mushroom and carrot

Ingredient:
- Fish Ball
- Mushroom
- Carrot
- Toufu

How to cook:
1. Cut Mushroom, carrot and toufu into smaller pieces
2. Boil soup, add in fish ball, followed by sliced mushroom, toufu and carrot and cook for half hour
3. Add in soya sauce and ready to serve

Steamed Toufu with Minced Pork and Tomatoes

Ingredient:
- Toufu
- Minced Pork
- Prawns
- Tomatoes
- Mushrooms

Prepare the ingredient:
1. Cut prawns and mushroom into very small cubes
2. Mix diced mushroom and prawn with minced pork, add in soya sauce, oyster sauce, seasame oil, pepper and corn flour
3. Cut tomatoes into thin slices

How to cook:
1. Spread tomatoes slices over plate as base layer
2. Place whole piece of toufu on top of tomatoes
3. Spread minced pork mixture over toufu
4. Steam over medium high flame for 15 mins

Stir Fried Brocoli with Capsicum and Prawns

Ingredient:
- Brocoli
- Prawns
- Capsicum
- Lean Pork

How to cook:
1. Stir fry garlic
2. Stir fry sliced pork
3. Add in prawn to stir fry
4. Add in Brocoli, followed by capsicum
5. Add 1 tsp of soya sauce and some pepper

Stir Fried Chicken with Red Pepper and Nuts

Ingredient:
- Red Pepper
- Chicken Breast/ Thigh
- Macadamia Nuts

How to cook:
1. Stir fry garlic
2. Add in sliced chicken and continue to stir fry
3. Add in Macadamia Nuts
4. Add in diced Red Pepper to continue stir fry
5. Add in some corn starch solution to thicken mixture

Banana Omelette

Ingredient:
- Banana
- Eggs
- Milk

How to cook:
1. Beat up eggs, add some milk, add in sliced bananas, add in some soya sauce and pepper
2. Pan fried egg mixture
